I accepted that you could be as different as you wanna be and it is not “weird” at all. I have learned to embrace the quirky little things that make me ME.
I don’t like to go to the movies.
I am quite content to watch movies on my little TV with my own little cheap low-fat popcorn.
When they first hit the scene here, my friends and husband were so stoked to have their college-town-fave-sub-shop nearby. I mean they aren’t bad tasting or anything and I would have one if there was nothing else to eat but I don’t have as much enthusiasm for the sandwiches as most people do.
Now, do not take this to believe that I don’t love animals. I do. But if I want to see the giraffes, tigers, and lions it would be in their natural habitat. Not next to the Dippin Dots stand.
So these are just a few of my “quirks” which really aren’t quirks, they are just things that make me who I am and I have embraced them.
This blog post idea came to me from my love of this next recipe.
Fresh. Apple. Cake.
I got the recipe from a Midwest Living magazine article back in 2008. It is from a Home Economics teacher from Minnesota or Wisconsin; the details are fuzzy but the cake is not. This cake also has some history in our home.
When I first wrote down the recipe in 2008, I thought, “hmmm, this looks good and has all ingredients I usually have on hand…” so I put it in my handy little recipe box and called it a day.
Three weeks later, my hubby lost his job.
We had to tighten our belts and cut some expenses and one of those expenses was the grocery bill.
One Friday, I was hungry for something sweet but the cupboard was essentially bare so I looked through my recipes desperate for something I could make with what I had on hand.
I had apples, flour, sugar and so on, so I quickly made friends with this recipe thinking it would most likely be a flop.
I was very, very wrong.
Heaven in a 9×13.
OK, maybe I am going a little overboard but it is good.
And I’ll tell you what it did do for my husband and me on that cold Friday night in January.
It gave us hope that something could bring us happiness again.
That we were lucky enough to have cake when the world is “crumbling” all around us.
So I nicknamed it Unemployment Cake to be witty but every time I make it, it reminds me of that January night and how things can’t be all that bad as long as there’s cake.
Fresh Apple “Unemployment” Cake
- 3 Cups Flour
- 2 Cups Sugar
- 1 Teaspoon Baking Soda
- 1 Teaspoon Salt
- 1 Teaspoon Ground Cinnamon
- 2 Eggs (lightly beaten)
- 1 1/4 Cup Veggie Oil (I never said it was fat-free)
- 2 Teaspoons Vanilla
- 3 Medium Apples (I usually use Gala, peeled and chopped to equal 3 cups)
- Grease a 9×13 pan and preheat oven to 350.
- In a large bowl, combine flour, sugar, soda, salt, and cinnamon.
- Make a well in the center of the dry ingredients.
- In another bowl, combine eggs, oil, and vanilla; stir in the apples.
- Combine the two mixtures and spread in a pan.
- Bake for 55 minutes.
