Sometimes You Just Need Pancakes

 

Can I just say THANK YOU?
To the friends who called, texted, emailed, sent packages and love from afar in response to Ellie’s kindergarten “woes”.
You do not know, how much it meant to me. 
I got a card from a long-time friend on Saturday and I just wept.
Happy tears.
I feel loved.
I feel supported.
I feel like we can do this.
So thank you.
From the bottom of my toes.
I love you all.
Here is the update: she is doing fantastic.
But changes are coming.

Long story short, starting next Monday she will begin a program that will bring her into school an hour earlier with a different bus driver, etc.
Please pray.
We are doing what we think is the best thing.

That’s all you can do.


So our Ellie has had a rough transition into Kindergarten.
I come from the fabric that comfort food can make any critical situation a little better.
I know in this age of all things Paleo and low-fat maybe that isn’t as popular a solution.
And to that, I say WHO CARES.
If I had a bad day growing up and my mom made me chocolate pudding, my misfortunes melted away.
To this day, chocolate pudding is my “mommy” food.
Along with “dunk eggs”.

Last week, I suggested to Ellie that we have chocolate chip pancakes for dinner.
Her face lit up like a Christmas tree.
For dinner?
Yes, sweetie.
Because sometimes you just need pancakes.

Chocolate chip pancakes
Bad Day Better Pancakes

2 C. flour
4 tbsps. sugar
4 tsps. Baking powder
1 tsp. salt
2 C. milk
4 Tbsp. Melted butter
2 eggs
2 Tbsp. oil
Chocolate chips (it varies. Some weeks we use one cup, others two. This week was a two-cup week.)

Mix all the above in a large mixing bowl until blended.
Preheat a griddle to 300-350 degrees.

If you love pancakes, invest in a griddle.
I cannot make pancakes in a frying pan.
Plus, if you are making for a family, it is hard to keep warm and make new ones all at once.
Another plus?
Grilled cheese on a griddle is superb. 

 

Chocolate chip pancakes make really bad days better

As the griddle is preheating, take a pat of butter/margarine and rub it all over the griddle.
Then take a 1/2 C. measuring cup and dole out your pancakes onto the griddle.
Two minutes per side is my lucky number.

 

Sometimes you just need chocolate chip pancakes

And ta-da!
Pancakes.
Or Panpakes as my girls call them.
I guarantee you can’t possibly frown while eating these.
And really, there is nothing a pancake can’t turn around.

  1. I could use a few panpakes today! I hear you on the griddle thing, but I just don't like storing those monstrosities. I finally gave mine to Goodwill and just make waffles in the waffle iron now (it's much smaller).

  2. Comfort food is called that for a good reason. Let the haters hate – sometimes something tasty is exactly what you need to make it all better. It is so tough to make the right decision for your kiddos, especially when others try to second guess it. We have gone through that with stuff with our kiddos and at the end of the day it is all about making your family better. Bleh to those that hinder instead of help!
