Four Ingredient Thanksgiving Recipes. Gobble Gobble

Thanksgiving is only a few weeks away!

Gobble. Gobble.
Usually, turkey day in our home means spending the day away from family because we are all so far apart.
So I like to make dishes that remind me of my family and these two are on our Thanksgiving table every single year.

 Green Bean Casserole

My mom and grandma are two of the best cooks I will ever meet but this casserole reminds me of home and Thanksgiving like no other.

Green Bean Casserole

  • 1 Can Cream of Mushroom or Chicken Soup
  • 3 Slices Bread (Cut up and toasted in butter )
  • 3 Cans Green Beans (Drained)
  1. In a buttered casserole, add in the green beans and soup. Mix together well. In a saucepan, take some butter and add the bread pieces. Stir and blend until all of the bread is covered in butter and is a little golden.Top casserole with the bread crumbs and bake in the oven at 350 for 45-55 minutes or until bubbly.

 

Uncle William’s Broccoli Cheese Casserole

I don’t remember who came up with this amazing recipe but it reminds me so much of my Uncle William as he loved this recipe so much.
He was a lifelong bachelor and the closest thing I knew to a grandpa since both my grandfathers passed away before I was born.
We make this for Easter too but it wouldn’t be Thanksgiving without this dish.

Uncle William’s Broccoli Cheese Casserole

  • 2 Bags Frozen Broccoli (cooked)
  • 2 Rolls Ritz Crackers (crushed)
  • 1 Pound Velveeta Cheese (sliced)
  • 2 Sticks Butter (melted)
  1. Cook broccoli in the microwave according to the package. Meanwhile, crush the Ritz crackers into crumbs and out in a saucepan with the butter. Melt together until all is covered with butter. Slice up your Velveeta and start layering in a 9 x 13 as follows:Broccoli

    Ritz mixture

     

    Bake at 350 for a solid 45-50 minutes or until bubbly.

Amazing.
And the leftovers?
Even more delicious.

These are down-home and simple.
Comfort food at its best.
And nothing says Thanksgiving like comfort food.
That and Uncle Earl sticking his hands down his pants while watching football.

  1. Oh, Uncle Earl, at it again. My mom sttill does most of the Thanksgiving cooking, but it's at my house so I do the Thanksgiving cleaning.
