If you know me at all, you know my favorite Christmas cookie is the elusive Rolo Cookie.
I say elusive because as amazingly yummy as these morsels of all things right with the world are; they aren’t too easy to make.
When I say “easy” I mean that there are steps.
Put the dough in the fridge for an hour.
Which, when you are craving a Rolo cookie, may seem like an eternity.
Until the Heavens opened up and this recipe fell in my lap.
I don’t even know where I got the recipe.
Yes, I do.
IT FELL DOWN FROM HEAVEN.
And it was MY dirty secret until recently.
When I shared it with you.
Because I like you an awful lot.
Easy Rolo Cookies
(not slutty. EASY TO MAKE)
–1 package of devil’s food cake mix (this is where you will see how my mind works. It bothers me I am using a devil’s food cake mix to make a Christmas cookie. OK, it really bothers me but in reading how the name originated, it means sinful to eat. And these are so good it should be bad. Carry on.)
OOOH, one more thing. If you have a problem with the whole devil’s food thing, you can use red velvet. In researching the devil’s food thing, it said that red velvet is close in texture, etc to the other so you could switch it out.
– 1 egg (nothing sinister here)
– 1/4 C. water
– 3 Tbsp. veggie oil
– Rolo candies, unwrapped (DUH)
NOTE- DOUBLE THIS BECAUSE THIS WILL REALLY ONLY MAKE ONE COOKIE SHEET’S WORTH. WHICH MEANS YOU WILL NEED TO BUY TWO DEVIL’S FOOD CAKE MIXES.
Combine the cake mix, egg, water, and oil in a large bowl.
Unwrap the Rolo candies.
I usually give this project to my “assistants”.
No, I don’t actually have assistants, I write my blog unlike celebrities who “blog”.
My assistants would be my children.
But they are getting all smart to unwrap the candy game and now want to help with the real cooking,
Or like my teenager and don’t want to help at all want to help with the eating of the food.
Spray a cookie sheet with cooking spray.
Now you need to know that the dough will be sticky.
Probably because of the whole devil thing.
Anyway, there are several things you can do to make the dough easier to work with.
1- spray your hands with Pam 2- put a thin layer of veggie oil on your hands or 3- put flour all over your hands.
Trust me, it will be bad if you don’t do the above.
You will sweating and swearing while making your Rolo cookie and you will ruin the whole Christmas spirit thing.
- Combine the cake mix, egg, water, and oil in a bowl.
- Put the bowl in the fridge for a solid hour because the dough will be way too flimsy and sticky to work with.
- After an hour, get a small bowl and put about a tablespoon of sugar in it. Then spray your hands with Pam spray and dig into the batter.
- Take a teaspoon size of dough in your hands; add a Rolo candy and surround the candy entirely with the batter.
- Dip the cookie into the sugar on one side.
- Place sugar side up on a greased cookie sheet and bake at 350 for 14 minutes.
Take a teaspoon of dough and work it in your hands.
Add the Rolo candy and cover it up in the dough.
Bake at 350 for 14-15 minutes.
Two tips- I love to add a dusting of sugar to add a little crunch to the cookie.
But sometimes I forget.
If you think of it, dip the cookie in sugar and place the sugar side up on the cookie sheet.
If you forget, sprinkle sugar over the tops of the cookies as they come out of the oven.
Oh and eat them right after they come out.
