In helping Ellie get used to school at the beginning of the year and to make school a fun place, I decided that it would be fun to host a “getting to know you” play date at a local park for her classmates.
Out of 16 classmates, seven came with their parents and siblings and it was so much fun.
The parents all got along, they were funny and easy to talk to and best of all, the kids had a blast.
I offered to bring snacks to the gathering since I was the one who suggested this shindig.
The only requirement for this was that it should be peanut free since one of Ellie’s classmates has a severe peanut allergy.
I also decided I wanted everything to be food dye free because our family is ridding our home of food dye.
There are many reasons but it just boils down to eliminating things slowly out of our home that we just feel icky about.
And I feel icky about food dye.
*** update- we TOTALLY eat food dye again. That lasted like, ten days. It was haaaard to find foods without it, it didn’t make a difference in our home so we are back. ****
Healthy, not totally full of sugar (you could make a low sugar version though!) and peanut and dye free.
And it was a huge hit at a party full of cheese crackers and cookies.
Here is my take on fruit pizza.
Oh and this fruit pizza is also a hit with bees.
I got stung by one at the said picnic.
Fruit Pizza That Should Be Served Indoors
(Bees Love It!!)
* this would be a great Weight Watchers recipe too! Just use low-fat graham crackers and fat-free cool whip and yogurt *
– graham cracker sticks (1 box)…there were none at my local store so I just used graham squares.
– 2 C. vanilla yogurt
– 2 C. Low fat or low sugar cool whip
– 2 Tbsp. coconut
– 1 banana
– strawberries ( I used an entire container)
– blueberries ( a small container is more than enough)
– you could add other fruits like kiwi or grapes if you would like.
- – graham cracker sticks (1 box…there were none at my local store so I just used graham squares.)
- – 2 C. vanilla yogurt
- – 2 C. Low fat or low sugar cool whip
- – 2 Tbsp. coconut
- – 1 banana
- – strawberries (I used an entire container)
- – blueberries (a small container is more than enough)
- – you could add other fruits like kiwi or grapes if you would like.
- Preheat oven to 350. Crush the graham cracker pieces then add the banana and mash it in. You can use a mixer or your hands. Place on a greased pizza pan or cookie sheet.
- Spread out with a spatula or rolling pin.
- Bake for 20 minutes.
- Let cool for five minutes after baking.
- Mix together the yogurt and the cool whip then spread with a spatula over the graham crust.
- Top with coconut then fruit.
Preheat your oven to 350.
Crush the graham cracker pieces.
Then add the banana and mash it in.
You could use a mixer or just your hands.
I used my hands, it was messy but easier to blend.
Place on a greased pizza pan or cookie sheet.
Spread out with a spatula or rolling pin.
Bake for 20 minutes.
It will smell so good when it is baking!
After it has come out of the oven, let it cool for five minutes.
Mix the yogurt and cool whip together.
Spread on top of the crust.
Top with the coconut, then the fruit and tada!
You might want to serve this at your next INDOOR gathering.
Because those bees were like ninjas around this dish.
And attacked everything and everyone (see: ME) in a 500-foot radius.
I am fine, I took some Benadryl when I got home, passed out for an hour and had a sore arm for two days.
But who knew a fruit pizza could take a person down?
Next time, I am bringin’ nachos.
Bees hate nachos.
