Cooking for my family can be one of my favorite parts of the day. But when we are going in different directions, especially now that back to school is in full swing, it can be stressful! Thankfully, I have a Meijer within five minutes of home and I love using them as my go-to for quick dinners.
I love that I can create a meal for $7 with rotisserie chicken, and a 2-liter Coca-Cola™.
Rotisserie chicken is a big favorite in our household and we could eat it alone (that skin!) but I also love to create something fun and yummy with the chicken as well. My husband and I have been on a low-carb diet since April and we are constantly struggling to find a meal that all of us can enjoy. The kids love fajitas, we love fajitas and after doing a little carbohydrate math, we realized that we could make this dinner and still stay on track.
Here is what you will need:
One 30 oz. rotisserie chicken from Meijer (skin removed if you are eating a low-carb diet*).
*I ate it though. Nothing to see here.
Cut your chicken apart, making sure to get as much juicy chicken as you can. There was so much that I was able to put the leftovers in the refrigerator and use it for another meal the next day!
I had an assistant, so of course, I had to give him the scraps but notice no skin. *
*Because I ate it.
Toppings are one of my favorite part of fajitas and I had all the above on hand, so no extra time, effort or money spent.
Cheese, pico de gallo, lettuce, sour cream (which are all low-carb) plus low-carb tortillas. You can play around and add anything else you’d like (guacamole!) but this is what I had on hand.
There is nothing like a cold Coca-Cola on a hot summer night and Coca-Cola Zero has been a savior for my husband and me during this low-carb diet.

Create an easy weeknight (or weekend!) dinner with rotisserie chicken from Meijer
- 1 Meijer rotisserie chicken
- 4 low carb flour tortillas
- 1 c. lettuce
- 1 Tbsp. sour cream
- 2 Tbsp. pico de gallo
- 4 Tbsp. shredded cheddar cheese
- Remove chicken from the bone. Either shred or chop chicken, depending on your preference.
- Place a flour tortilla on a plate and add toppings that you desire.
- To heat fajitas, put in microwave for 30 seconds.
