my favorite christmas candy

i’ve mentioned one of my favorite christmas treats (special k candy) on my blog before. in one of my 100 things i love posts, and more recently in my where i’m from poem.

every christmas, my mother and grandmother would make this, and i usually preferred buckeyes over it. but as i grew older, my favorite candy became this one.

a few of you asked what special k candy was, and since i’m not one to gatekeep, here’s the recipe for my beloved favorite family treat.



special k candy

1 cup white sugar

1/2 cup brown sugar

1 cup of white karo syrup


bring those three ingredients to a boil.


then add:

1/2 stick butter (or oleo, also known as margarine)

1 teaspoon of vanilla

1 1/2 cups of crunchy peanut butter


stir into the sugar mixture while it is hot. then add in 5-6 cups of special k cereal.

drop by spoonfuls onto wax paper and let cool.


by no means is this a healthy recipe. but we don’t make it on a regular basis. it’s a special recipe (special k).

  1. What I wouldn’t give for a batch of my Grandma’s Scotcheroos–made with Rice crispies, Karo syrup, chocolate and butterscotch. I tried to make it once myself, and it was a pretty spectacular fail. I think Scotcheroos and Special K Candy are in the same food genre.

  2. Kari, I remember these bars from when I was a kid. YUM-MY! Memories light the corners of my mind!

    I barely eats sweets anymore, but when I do, it’s a piece of dark chocolate. My favorite Christmas candy is dark chocolate peppermint bark. To me the combination of dark chocolate and peppermint is heaven on earth!

  3. This does sound like a special recipe and you are so lucky to have the recipe. My memere used to make the best macaroni and cheese with canned tomatoes and I always kick myself for never getting the recipe from her.

  4. I’ve never heard of these and have to admit I’m darned surprised about that. We grew up in similar areas, small town, and this would be exactly the sort of recipe that would have made the rounds. How did we miss it?

  5. I’ve never heard of this either. It sounds yummy. I can’t eat cornflake or Special K, but I could probably sub something in that would be GF. Or I could be generous and kind and make it for my kids.

    I laughed when I saw oleo. My grandma’s recipes called for oleo.

  6. OOOHHHH GIRL
    You know, this reminds me very much of a recipe my mom would make, except it’s squares. It looks very similar (except what is karo syrup?) but uses Cheerios and Corn Flakes. OMG delicious. I would eat the bejesus out of this right now.
    My grandma Fern was an incredible cook and everything was delicious, she used to make the best cookies and her secret was that she used Crisco golden shortening. My other grandma was a TERRIBLE cook, like the worst English/ Scottish cook imaginable, like “leave the cherry pits in when you make a pie” kind of cook, but her gingersnap cookies were divine. It’s the only positive food memory I have of hers, but I make those cookies every year!

    1. Karo is corn syrup, which is definitely not good for you, and I’m not even sure if there is a substitute.

      My grandmother (my mother’s mother) was also an excellent cook. My mom is as well. I’m fortunate to come from a line of incredible female cooks and bakers. I’m glad you have it as well. On one side of the tree, at least. 🤣

  7. This sounds vaguely familiar, so I believe my mom may have made these once or twice. We also had potato chip cookies. I feel as though they made up these recipes to use up stale cereal and chips. 🤣

    By any chance, did you make your kids peanut butter Cheerio bars (similar to Rice Krispie treats, only with PB added). My son LOVED them.

    1. We make mashed potato candy as well, so potato chip cookies sound very familiar. They definitely use old items from the cupboard. 🤣

      YES! We definitely made those! My mom adds Rice Krispies to Buckeyes, and let me tell you, it elevates them. Oh man…

  8. I’d never heard of this candy before either! It sounds yummy! It’s funny how old family recipes taste better than anything else.
